Dewey’s BBQ Market represents a fresh start for a legendary BBQ tradition that began in Greenville, Texas in 1951. The original restaurant—founded by Dewey Fitzpatrick—served the community for over 50 years before closing its doors in 2004. Today, the youngest of Dewey’s seven children is bringing that legacy back to life in Skokie, Illinois, honoring the craft, values, and flavors that made the family business special.
At the heart of our concept is a commitment to true Spare Rib–style barbecue, made the way Robert's Dad, Dewey, did it: slow-smoked in a handcrafted BBQ pit designed to replicate the original one from the 1950s. We believe that this method produces unmatched flavor—and we refuse to cut corners. You won’t find liquid smoke, pellet smokers, oven‑baked or boiled meats, or heavy sweet sauce masking shortcuts in the kitchen. Those approaches may be faster, but they don’t deliver the authenticity or quality we stand for. We stay true to the craft.
In addition to exceptional smoked meats, we aim to create an atmosphere that makes guests feel like they’ve stepped back into The Spare Rib restaurant during the 1960s, ’70s, and ’80s. Music, hospitality, and genuine friendliness are part of the experience—just like they were decades ago.
