Dewey’s BBQ Market Roots
Dewey’s BBQ Market was founded in 1951 from The Spare Rib Bar-B-Q Pit, which opened in Greenville, near Dallas, Texas, and served North Texans for 50-plus years. Dewey’s BBQ Market honors Spare Rib founder, Dewey Fitzpatrick, by using Dewey’s tried and proven smoked meat preparation processes and seasonings (some call “dry rub”). Robert Fitzpatrick, the youngest of Dewey’s children, is finalizing plans for a brick and mortar store to carry on the family business in the Chicago area.
Dewey’s BBQ Market Tradition Lives On
Dewey’s BBQ Market will use hardwood fire methods, to prepare locally sourced, highest quality meats smoking them slowly at a low temperature for many hours to ensure that deep-down hardwood smoked flavor. Conventional ovens, charcoal, natural or propane gas, wood pellets, liquid smoke, or the boiling of meat are not used in true Texas African-American tradition. Our old customers appreciated the taste difference and we are sure you will too.
